Buffalo Chicken Casserole

This casserole can be served a variety of ways, you can serve it as is for a low-carb option that also meets Keto diet guidelines or you can can serve it over some quinoa, wild rice or gluten-free pasta of choice.

 

Ingredients:

  • Three cups of cooked chicken, diced or shredded

  • One 8 oz package of goat cheese softened or vegan cream cheese (Low Fodmap)

  • 1/2 cup of mayo (I use Veganaise, which is egg-free)

  • 1/2 cup and 1 tbsp of hot sauce

  • 4 cups of broccoli steamed (you can also use cauliflower or brussles sprouts)

  • 1 tsp Sea Salt

  • 1/2 tsp Italian seasoning (we use more)

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder


Directions:

  1. Preheat oven to 375 degrees F

  2. Mix all ingredients in a large bowl until fully combined

  3. Pour mixture into a 9x13 baking dish

  4. Bake for 15 minutes or until casserole is hot and bubbly

  5. Enjoy!
