Beef Stroganoff

This is my twist on one of America's favorite dishes: Beef Stroganoff.

 

Ingredients: 

  • 1 lb grass-fed, organic beef

  • 1/2 log goat cheese (4 oz)

  • 7-8 mushrooms finely chopped

  • 1/3 onion finely chopped

  • 1/4 cup vegan mayo

  • 1/4 cup hot water

  • 1 tbsp worstershire sauce

  • 1 tbsp spicy mustard

  • 1 tbsp ghee

  • 1/2 tbsp nutritional yeast

  • 1 tsp salt (or to taste)

  • 1 tsp black pepper (or to taste)

  • Gluten-free pasta of choice (I use Banza)

 

Directions: 

  1. Saute chopped onions and mushrooms in ghee for 2 minutes. Add beef, salt and pepper and continue to cook until beef is no longer pink.

  2. Add worcestershire sauce, vegan mayo and spicy mustard to pan and mix until fully incorporated.

  3. Add the goat cheese and incorporate well, you may need to add hot water a little at a time until desired consistency (you might not use any, depending on how fatty your beef is)

  4. Once desired consistency is reached you can add 1/2 tbsp of nutritional yeast and stir and simmer for 2 minutes.

  5. Serve over your favorite gluten-free pasta and enjoy!
