THIS right here is one of my all-time favorite Christmas candy/treats - I have two ways of making them:

Gluten-free + Dairy-free BUT I use Simple Mills honey gram crackers instead of almond flour - this is more of a beginner level treat, perfect for bringing to your family or friend's holiday party and they will have no idea they are a healthy swap!
Today I am going to share my STRAIGHT UP HEALTHY OPTION:
Ingredients:
Peanut butter dough:
2 cups of unsweetened peanut butter (sub one cup chunky if you like some crunch!)
2 cups powdered coconut sugar for low glycemic option or powdered cane sugar for traditional option
1 tsp cinnamon
1/2 cup almond flour
1/2 cup cassava flour
1/4 cup coconut oil (can use ghee or butter too)
Chocolate coating:
1-2 cups of chocolate chips (Lily's for no sugar and Enjoy Life for full sugar) melted
1/4 tsp coconut oil as needed to smooth the consistency
Directions:
Mix all peanut butter dough ingredients together in standing mixer
Refrigerate dough mixture for 2 hours
Prepare large baking sheet covered with parchment paper
Roll cold dough into 1 inch ball
Roll in your favorite melted chocolate + coconut oil
Place on a large parchment paper lined pan in fridge to cool and "set"
Store in air tight container in the fridge or if you live in Wisconsin like me: OUTSIDE!
