Oat Power Balls

Are you looking for an easy allergy friendly recipe that is packed with healthy fat, protein and carbohydrates? Look no further-these protein balls are so delicious and versatile. Have a peanut allergy? Use a different nut butter. Have a sunflower seed allergy? Double the pumpkin seeds, you really can't go wrong with these puppies.

 

Ingredients:​ 

  • 1 cup sprouted rolled oats or quinoa flakes

  • 1/2 cup pumpkin seeds

  • 1/2 cup sunflower seeds

  • 1/2 cup chocolate chips (I use Enjoy Life)

  • 1/4 cup almond flour

  • 1/2 cup peanut butter

  • 1/2 cup honey

  • 1/2 cup of coconut flakes (optional to roll finished product in)


Directions: 

  1. Pour all ingredients into a mixing bowl and stir until well combined.

  2. Roll in to 1-2 inch balls.

  3. Roll finished balls in shredded coconut flakes (optional)

  4. Store in a resealable container in the freezer or fridge.

  5. Enjoy!
